Enjoy sensational summer fruit and the flavours of NESTLÉ DIET Yogurt - without the added kilojoules.

Ingredients

Lime(s)

1 medium

Caster sugar

2 tbs

Fresh mint

½ cup(s), small leaves

Vanilla yoghurt, 99% fat-free, no added sugar

800 g

Mango

2 medium, peeled

Fresh blueberries

150 g

Instructions

  1. Zest long strips from lime and set aside.
  2. Juice lime and combine sugar and 1/2 cup water in a saucepan over high heat. Boil, shaking pan occasionally, for 3 minutes until reduced and syrupy. Remove from heat and add half the mint leaves. Set aside and allow to cool completely. Strain. Stir through zest.
  3. Spoon Vanilla Yogurt into four serving bowls.
  4. Remove the cheeks from mangoes, score flesh and turn pieces out. Divide into serving bowls, then top with blueberries.
  5. Drizzle with lime syrup and scatter with remaining mint leaves and lime zest.

Notes

If you don't have a zester, use a peeler and remove the white pith.
