Lentil and chickpea chermoula salad

Legumes provide a wealth of nutritional benefits. This chermoula salad makes a great side salad for a dinner party or BBQ.


Ingredients
Canned chickpeas, rinsed and drained
1 400g can, (1x400g can)
Lentils, canned, rinsed, drained
1 400g can, (1x 400g can)
Roasted capsicum, not in oil
200 g, chopped
Lebanese cucumber
1 medium, deseeded, finely chopped
Cherry tomatoes
200 g, halved
Celery
2 stick(s), trimmed, finely chopped
Green shallot(s)
2 individual, thinly sliced
Fresh coriander
½ cup(s), finely chopped
Fresh flat-leaf parsley
½ cup(s), finely chopped
Fresh red chilli
1 whole, finely chopped
Moroccan seasoning
2 tsp
Lemon juice
¼ cup(s), (60ml)
Instructions

Place chickpeas, lentils, capsicum, cucumber, tomatoes, celery, shallots, fresh coriander, parsley and chilli in a large bowl. Season with salt and freshly ground black pepper. Stir to combine.

Whisk seasoning and juice in a small bowl.

Add dressing to salad and toss to combine. Serve.
