Glazed chicken is treat for everyone! Sweet, sticky and tender chicken tossed with vibrant chargrilled Asian veggies is perfect for a delicious and easy mid-week meal.

Ingredients

plum sauce

2 tbs

soy sauce

1 tbs

Chinese five spice

½ tsp

skinless chicken breast

500 g, tenderloin, fat trimmed

mushrooms

4 whole, flat

red capsicum

1 medium, cut into thick strips

baby corn

115 g

bok choy

4 baby, halved

sesame oil

3 tsp

lime(s)

1 medium, cut into wedges, to serve

Instructions

  1. Preheat a chargrill or barbecue on medium-high.
  2. Combine plum sauce, soy sauce, Chinese five spice powder and 1tbs water in a heatproof jug. Heat in microwave on High (100%) for 30 seconds or until hot. Brush chicken with half the sauce mixture. Chargrill chicken, turning and brushing occasionally with some of the remaining sauce, for 3 minutes each side or until cooked through.
  3. Meanwhile, brush mushrooms, capsicum, baby corn and bok choy with sesame oil. Chargrill vegetables with chicken for 3-4 minutes each side or until lightly charred and tender.

Notes

SERVING SUGGESTION: Lime wedges.
