Fig and pistachio trail mix
A tasty snack that will satisfy your sweet cravings with dried fruit, toasted coconut and seeds.
⅓ cup(s), (45g)
¼ cup(s), (30g) chopped
Shredded or desiccated coconut
⅓ cup(s), (50g) chopped
¼ cup(s), (50g) chopped
- Preheat oven to 180°C. Spread pistachios and pecans on a baking tray. Bake for 3 minutes. Stir. Add pepitas, sunflower seeds and coconut and bake for 2 minutes or until lightly browned. Cool for 10 minutes.
- Combine nut mixture, cranberries and figs in a bowl. Cool completely before transferring to an airtight container.
TIP: Trail mix will keep for up to 2 weeks in an airtight container. To serve, pack individual portions into small containers or snap-lock bags ready for an on-the-go snack.
