Caramelised onion and pepper beef fillet
Lean beef fillet
400 g, fat trimmed, (buy 500g)
30 g, (2 tbs caramelised onion)
1 tbs, (cracked black)
400 g, halved
1 bag(s), (4x sprigs)
Extra light sour cream
¼ cup(s), (60g)
1 x 3 second spray(s)
- Preheat oven to 200°C or 180°C fan-forced. Spread beef with onion and sprinkle with pepper. Lightly spray a large non-stick frying pan with oil and heat over high heat. Cook beef, turning, for 5–7 minutes or until browned. Place in a medium baking dish and bake for 25 minutes for medium-rare or until cooked to your liking. Transfer to a plate. Cover beef with foil and set aside to rest for 20 minutes before slicing thickly.
- Meanwhile, place potatoes, oil and thyme on a large baking tray and toss to combine. Bake in oven with beef for 35–40 minutes or until potatoes are golden and tender.
- Combine sour cream and horseradish in a small bowl. Serve with beef and roasted potatoes.
