Notes

Place 1 x 40g wholegrain tortilla on a large baking tray and spread with 1 tbs tomato paste. Top with 1/4 red onion (finely chopped), ½ zucchini (thinly sliced), a sprinkle of dried oregano, 25g goat's cheese (crumbled) and 1 tbs reduced-fat mozzarella cheese. Bake in oven preheated to 220°C or 200°C fan-forced until base is crisp and cheese has melted. Top with fresh basil leaves and serve with mixed salad leaves.
