Smokey beans and mince baked potatoes

extra lean beef mince, raw

canned cannellini beans, rinsed, drained

extra light sour cream

fresh chives

1 tbs, finely chopped


½ cup(s), florets, steamed


Bake potato in an oven preheated to 180°C or 160°C fan-forced until tender. Cut a deep cross in potato and keep warm. Heat 1 tsp olive oil in a frying pan. Cook onion, bacon and beef mince, stirring, until browned. Stir in half of the tomato, beans and smoked paprika. Cook, stirring, until tomato has softened. Pour mixture over baked potato. Top with sour cream, fresh chives and remaining tomato. Serve with steamed broccoli.
