Mini peanut butter-chocolate graham cupcakes

Here's everyone's favourite duo in a bite-size snack. For an extra dose of chocolate, swap in chocolate powdered peanut butter for the plain powdered peanut butter. You can also use powdered almond butter if you prefer.

Unprepared vanilla cake mix
½ package(s)
Egg
3 large
Water
3 tbsp(s)
Vegetable oil
1 tbsp(s)
Lite whipped topping
1 cup(s)
Powdered peanut butter
2½ tbsp(s)
Chocolate graham crackers
5 square(s), roughly crushed

Preheat oven to 350°F. Lightly coat 15 holes of a nonstick mini muffin pan with nonstick cooking spray (or use mini cupcake liners).

In a small bowl, whisk together cake mix, eggs, water, and oil until smooth. Evenly divide batter among prepared muffin holes. Bake until a toothpick inserted into the center of a cupcake comes out clean, 9 to 11 minutes; let cupcakes cool.

Combine whipped topping with powdered peanut butter; evenly divide over cooled cupcakes and garnish with graham crumbs.
