A peppery coleslaw with added crunch and flavour from toasted sesame and sunflower seeds.

Ingredients

Uncooked celery root

250 gm(s), peeled and grated

Uncooked carrot(s)

150 gm(s), peeled and grated

Fresh radish(es)

8 small, sliced

Lemon(s)

1 medium, juice and finely grated zest

Plain fat free yogurt

1 cup(s)

Fat free mayonnaise

4 tbsp(s)

Mustard

½ tsp(s), powder, (optional)

Garlic clove(s)

1 clove(s), large, crushed

Sesame seeds

1 tbsp(s)

Roasted pumpkin seed kernels

1 tbsp(s)

Instructions

  1. Put all the vegetables in a large mixing bowl, add the lemon juice and zest and toss to mix.
  2. In a separate bowl, mix together the dressing ingredients with 2 tbsp water, then pour over the salad and mix thoroughly.
  3. Heat a heavy based pan until hot, add the sesame and pumpkin seeds and stir for 1-2 minutes until golden and popping. Cool. Serve the slaw sprinkled with the seeds.
