To make this omelet even more flavourful, choose a feta cheese with sun-dried tomatoes or basil.

Regular liquid egg substitute
1 medium, regular or whole-wheat
2 tbsp(s), crumbled
- In a small nonstick skillet, heat oil. Sauté garlic until fragrant, about 30 seconds. Add spinach and cook until wilted, about 3 minutes.
- Pour egg substitute over spinach to coat surface of pan; cook until edges are firm, about 2 minutes. With a spatula, flip omelet and cook until firm, about 2 minutes.
- Place omelet on tortilla, then sprinkle with feta. Roll up tortilla and slice in half.
