Spinach and Coriander Soup
2 medium, peeled and chopped
2 clove(s), medium, finely chopped
boiled potato(es) with salt
2 small, peeled and chopped
1 tsp(s), ground
180 gm, bag baby spinach
fat free vegetable broth
dried coriander leaf
2 tbsp(s), a small bunch, roughly chopped
1 tsp(s), and freshly ground black pepper
- Spray a large saucepan with cooking spray and stir-fry the onions, potatoes and garlic with the ground coriander for a few minutes then add a couple of tablespoons of water, turn the heat down to a minimum and cover the pan.
- Leave to sweat for 15 mins, until the onions are soft.
- Add the spinach, coriander and stock and cook for a further 10 mins. Liquidise the soup and check the seasoning before serving.
