Spinach and Coriander Soup

A wonderfully aromatic soup full of nutrients and full on flavour.


Uncooked onion(s)

2 medium, peeled and chopped

Garlic clove(s)

2 clove(s), large, finely chopped

Boiled potato(es) with salt

2 small, peeled and chopped

Coriander seed(s)

1 tsp(s), ground

Fresh spinach

180 gm(s), bag baby spinach

Vegetable broth

1 cup(s)

Dried coriander leaf

2 tbsp(s), a small bunch, roughly chopped

Table salt

1 tsp(s), and freshly ground black pepper


  1. Spray a large saucepan with cooking spray and stir-fry the onions, potatoes and garlic with the ground coriander for a few minutes then add a couple of tablespoons of water, turn the heat down to a minimum and cover the pan.
  2. Leave to sweat for 15 mins, until the onions are soft.
  3. Add the spinach, coriander and stock and cook for a further 10 mins. Liquidise the soup and check the seasoning before serving.
