This Indian-style favourite is pretty much the ultimate slow-cooker dish: Simply throw all the ingredients into the pot, go about your day, and you’ll return home to tender, perfectly spiced chicken thighs, ready to devour for dinner. Serve with brown basmati rice and a side of wilted baby spinach or steamed peas as your green veggies.

Ingredients

Uncooked boneless skinless chicken thigh

Canned crushed tomatoes

Onion

1 small, finely chopped

Garam masala

2 tbsp(s)

Dark brown sugar

1 tbsp(s)

Minced garlic

1 tbsp(s)

Table salt

1 tbsp(s)

Ginger root

1 tbsp(s), fresh, peeled, finely chopped

Ground coriander

½ tsp(s)

Ground cumin

½ tsp(s)

Plain lowfat Greek yogurt

½ cup(s)

Cilantro

¼ cup(s), fresh, chopped (optional)

Instructions

  1. In a 4- to 6-quart slow cooker, combine the chicken, tomatoes, onion, garam masala, sugar, garlic, salt, ginger, coriander, and cumin. Cover and cook for 3 to 4 hours on High or for 6 to 8 hours on Low. Stir in the yogurt. Garnish with the cilantro (if using).
  2. Yields about 1 cup chicken with sauce per serving.
