Our "You won't believe you're on a diet" theme continues with this low-PointsPlus guacamole. The secret ingredient? Puréeed white beans.

Ingredients

avocado

1 item(s), medium, Haas, peeled and pitted

canned white beans

15 oz, small, rinsed and drained

fresh lime juice

1 Tbsp

fresh tomato(es)

1 medium, diced

cilantro

2 tbsp(s), fresh, chopped

table salt

tsp(s), or to taste

black pepper

pinch, or to taste

baked low fat tortilla chips

8 oz

Instructions

  1. Combine avocado, beans and lime juice in a food processor; process until blended and smooth. If you don't have a food processor, mash ingredients together with a fork.
  2. Transfer mixture to a medium bowl and fold in tomato and cilantro. Season to taste with salt and pepper. Serve guacamole with baked chips on the side. Yields about 1/4 cup of guacamole and 1 ounce of baked chips per serving.
