For a slightly different flavour, use pineapple chunks or apricots in place of the pears or swap winter squash for the sweet potatoes.

Ingredients

Vegetable oil

1 tbsp(s)

All-purpose flour

1 tbsp(s)

Curry powder

1 tsp(s)

Table salt

¾ tsp(s)

Uncooked lean trimmed boneless pork chop

1 pound(s), four 4-oz pieces

Canned sweet yams in syrup

15 oz, drained

Dried thyme

½ tsp(s)

Unsweetened canned pears

15 oz, drained, reserve 1/2 cup juice

Black pepper

Instructions

  1. In a large nonstick skillet, heat oil.
  2. In a large sealable plastic bag, mix flour, curry powder and 1/4 tsp of salt. Add pork and shake to coat.
  3. Transfer pork to skillet. Sauté until cooked through, about 3 minutes on each side.
  4. Meanwhile, cut yams into bite-size chunks. Add to pork with pears, reserved pear juice, thyme, pepper and remaining 1/2 teaspoon of salt. Reduce heat and simmer until pork is cooked through, about 2 minutes longer.
