Special enough for holiday entertaining yet easy enough for a busy weeknight, since you cook it in the microwave.

Ingredients

Butternut squash

570 gm, fresh, peeled and cubed*

Apple

2 medium, Granny Smith,peeled,cored and cut into small piece

Apple cider

½ cup(s)

Butter

1 tbsp(s), cut up

Fresh thyme

1½ tsp(s), fresh, chopped

Table salt

½ tsp(s)

Black pepper

¼ pinch(es), freshly ground, or to taste

Instructions

  1. Put squash, apples and cider in a shallow microwave-safe baking dish or container; sprinkle butter over top. Cover and microwave until tender, about 10 to 12 minutes. Mash until smooth, yet slightly chunky; stir in thyme, salt and pepper. Yields about 150ml (2/3 cup) per serving.

Notes

*Look for 570g (1 1/4 pound) packages of already peeled and cubed butternut squash in the produce section of your grocery store. It’s an incredible time-saver.
