This light and flavourful dip gets its amazing creaminess from a dollop of Greek Yogurt. Try it with crudité or baked pita chips or even as a spread for sandwiches.

Ingredients

Canned cannellini beans

15 oz, drained and rinsed

Plain lowfat Greek yogurt

¼ cup(s)

Olive oil

1 tbsp(s), extra virgin

Fresh lemon juice

1 tbsp(s)

Lemon zest

1 tsp(s)

Minced garlic

¾ tsp(s), fresh

Kosher salt

¾ tsp(s)

Rosemary

¾ tbsp(s), fresh, minced

Fresh parsley

1 tbsp(s), minced, plus extra for garnish

Instructions

  1. Combine all ingredients but rosemary and parsley in a food processor or blender and puree until smooth. Stir in herbs, garnish with additional parsley, and serve.

Notes

Dip can be made several days ahead. Serve at room temperature for the best flavour.
