These super-simple wraps feature lots of crunchy veggies plus chicken for extra protein. They can be made in advance and keep well for a picnic or brown-bag lunch. Ingredients

WW 100% Whole Wheat Tortilla

4 tortilla(s)

Plain hummus

¾ cup(s)

Grilled skinless boneless chicken breast

8 oz

Fresh parsley

¼ cup(s), minced flat-leaf

Shredded carrots

1 cup(s)

Shredded red cabbage

1 cup(s)

Uncooked bean sprouts

1 cup(s)

Red onion

¾ cup(s), sliced, minced

Fresh lemon juice

½ tsp(s)

Table salt

½ tsp(s)

Instructions

  1. Spread 3 TB of hummus down the center of each tortilla.
  2. For each wrap, place 2oz chicken on hummus. Sprinkle with parsley.
  3. Layer ¼ cup carrots, ¼ cup cabbage, and ¼ cup sprouts on each wrap. Sprinkle with red onion, lemon juice, and salt.
  4. Roll up burrito style, wrap tightly in wax paper, and cut in half cross-wise.

Notes

Seek out pre-shredded carrots and cabbage in your supermarket to simplify these wraps even more.
