This refreshing sweet and savoury salad combines sweet watermelon, peppery arugula, creamy goat cheese, and crunchy pumpkin seeds. The flavours are brought together with the drizzle of a store-bought balsamic glaze. Grilling the watermelon caramelizes the melon, giving it a sweet and smoky flavour. The watermelon slices can be cut a day ahead and refrigerated. Serve alongside pasta or grilled pork, chicken, or fish.
