Sugar and spice and all things nice! This gingerbread loaf is reminiscent of the gingerbread cookies you used to make and decorate as a kid. Hints of ginger, all spice, and cloves will put you in the festive mood anytime of the year.


Ingredients
Fat-free skim milk
½ cup(s)
Salted butter
⅓ cup(s)
Ground ginger
2 tsp(s)
Ground cinnamon
1 tsp(s)
Ground allspice
¼ tsp(s)
Ground cloves
¼ tsp(s)
Unpacked brown sugar
⅓ cup(s)
Honey
2 tbsp(s)
Egg
1 medium
Self-rising flour

Instructions

Preheat oven to 350˚F. Line base and sides of a 19cm x 8cm loaf pan with parchment paper, allowing it to hang over the 2 long sides (this allows for easy removal from the pan).

Place milk, butter, ginger, cinnamon, allspice and cloves in a large saucepan over medium-high heat. Cook for 2 minutes or until the butter has melted. Remove from heat. Whisk in sugar, honey and egg until combined. Stir in flour until just combined.

Spoon mixture into prepared pan. Bake for 40 minutes or until a skewer inserted in the centre comes out clean. Set loaf aside in pan for 5 minutes before turning out onto a wire rack to cool. Serve warm or at room temperature.
