Whip up this dinner from leftover cooked chicken breast and cooked sliced roasted peppers. Or cook raw chicken strips and fresh peppers in a skillet with cooking spray and your favourite dried fajita seasonings.

Ingredients

Cooked skinless, boneless chicken breast

3 oz, cut into thin strips

Red bell pepper

1 cup(s), chopped, cut into thin strips

Fat free refried beans

½ cup(s)

Salsa

2 tbsp(s)

Lime

1 wedge(s)

Cilantro

1 tbsp(s), and/or sliced scallions

Instructions

  1. Warm chicken and pepper strips; serve with warmed beans and salsa. Squeeze fresh lime over top; garnish with cilantro and/or scallions.
  2. Makes 1 serving.

Notes

Serve with optional tortillas or large lettuce leaves to make lettuce wraps.
