Mirin, a type of rice wine, is a staple in Japanese cooking. It's often used to add a touch of sweetness to sauces and glazes.

Ingredients

Carrots

2 medium, julienned

Cherry tomatoes

1 cup(s), about 7 or 8, halved

Cucumber

1 medium, peeled and sliced into 1/4-inch-thick half-moons

Uncooked scallions

2 medium, chopped

Mirin

½ fl oz, about 1 Tbsp

Garlic

1 clove(s), medium, minced

Red pepper flakes

¼ tsp(s), or 1/4 tsp minced red chili

Ginger root

½ tsp(s), minced

Vinegar

1 tbsp(s), rice

Miso

1 tsp(s), paste

Instructions

  1. In a medium bowl, combine carrots, tomatoes, cucumber and scallions.
  2. In a separate bowl, mix together remaining ingredients and pour over salad. Let sit at least a half an hour before serving.
