Spicy Lentil Casserole

Heat oil in a non-stick skillet. Saute onion and garlic until tender. Add cilantro, pepper and cumin and cook for 3-5 minutes. Add salsa and tomato sauce and bring to a simmer. At desired temperature, stir in lentils and serve topped with fat-free soy cheese.
