Mexican Scrambled Eggs with Black Beans

1 Tbsp, fresh, chopped

canned black beans

Mix eggs, scallion, garlic and red pepper thoroughly together in a medium bowl. Heat a nonstick skillet over medium-high heat and pour in egg mixture. Cook 1 minute and then mix in beans and cilantro. Scramble and cook until desired doneness, 3 to 5 minutes.
