Notes

Bring broth to a simmer in a medium pot. Meanwhile, beat together egg, water and lemon juice in a heatproof bowl. Whisking constantly, pour half of simmered broth into egg mixture. Slowly pour all of egg mixture into pot (with remaining broth), whisking constantly to prevent curdling. Add chicken, carrots, chives, salt and pepper. Heat soup over very low heat until contents are hot and broth is slightly thickened, stirring constantly. (PREP TIP: This is one of the most famous dishes in Greek cuisine but one of the trickiest. For an easy variation, stir 1 tablespoon of flour – 1/2 PointsPlus value – into 1/4 cup of chicken broth in a pot over medium heat. Add the remaining 1 1/4 cups of broth and cook, stirring, until slightly thickened. Add the lemon juice, chicken, carrots, chives, salt and pepper; heat through. You are omitting the egg.)
