Tomato and Nectarine Salad with Scallions and Pumpkin Seeds

Feel free to substitute peaches or plums for the nectarines or use a combination of stone fruit.

Ingredients

1 pound(s) fresh tomatoes, any kind, cored, sliced or chopped
1 pound(s) nectarine (s), pitted, cut into thick wedges
2 Tbsp extra virgin olive oil
2 Tbsp fresh lime juice
1⁄2 tsp kosher salt, or to taste
5 cup(s) arugula, baby variety
4 medium uncooked scallion (s), ends trimmed, thinly sliced
3 Tbsp roasted salted pepitas

Instructions

Place tomatoes and nectarines in a large mixing bowl; drizzle with oil and lime juice. Sprinkle with salt; gently combine with your hands.
Place arugula on a large serving platter; spoon tomato mixture over top. Sprinkle with scallions and pumpkin seeds; serve immediately.
