1⁄4 cup(s) no salt added diced tomatoes
1⁄4 cup(s) cucumber(s), diced
1⁄4 cup(s) canned chickpeas
1 tsp sea salt
1 tsp lemon zest
2 tsp olive oil
Instructions
Layer the yogurt in a shallow dish. Sprinkle with paprika. Arrange tomatoes, cucumber, and chickpeas atop the yogourt. Sprinkle with spices, lemon zest, and olive oil.

Ingredients

1 small uncooked carrot(s), cut into half moons
1 tsp harissa paste
2 tsp olive oil
1 cup(s) fresh baby spinach
1 Tbsp roasted red peppers (packed in water), chopped
Instructions
Preheat oven to 400F. Toss carrots, oil, and harissa together. Arrange evenly on a parchment-lined baking sheet and roast for 20 minutes, or until tender. Remove from oven and let cool.
Layer the yogurt in a shallow dish. Arrange the carrots, spinach, and red peppers over top.
