For souvlaki recipes, prep all of the ingredients (with the exception of the meat, which should be cooked right before serving) up to a day in advance and store in resealable containers. Instead of cooking an entire lobster, check out your local fish counter to see if they stock pre-cooked lobster meat. If you can’t find lobster, pre-cooked crab tends to be more readily available as well as being more cost effective. Similarly, for the crispy fish sandwiches, haddock and tilapia are excellent substitutions if cod isn’t available.

The secret to easy ice cream sandwiches? Giving the ice cream a few minutes to partially thaw out at room temperature before spreading it over the cookies. Once the sandwiches have been assembled, the ice cream sides can be lightly rolled in your choice of sprinkles, mini chocolate chips, crushed graham crackers or chocolate wafers. Save your ripe bananas for homemade nice cream, the end result will be naturally sweet without the use of added sugar.
