Peach Cobbler Overnight Oats

Overnight oats are a great, time-saving way to start your morning off right! Here we have channeled the classic flavours of peach cobbler, making this breakfast as good as dessert!

Ingredients

  • 1 medium banana)

  • 1⁄3 cup light unsweetened coconut milk

  • 1⁄3 cup uncooked old fashioned oats

  • 1 Tbsp uncooked old fashioned oats

  • 1⁄2 tsp vanilla extract

  • 1⁄4 tsp ground nutmeg

  • 1⁄4 tsp ground cinnamon

  • 1 pinch table salt

  • 1 medium peach, peeled and chopped in ½ inch cubes

  • 1 tsp unpacked brown sugar

  • 1 tsp reduced-calorie margarine, melted

Instructions

In a large bowl, mash banana with coconut milk. Stir in 1/3 cup of oats, vanilla, nutmeg, cinnamon, and salt; mix until well combined. Place the oat mixture in a glass jar and top with peaches. Refrigerate overnight.

Preheat oven to 350F. In a small bowl combine remaining 1 Tbsp of oats, melted margarine, and brown sugar and spread on a parchment-lined baking sheet. Bake for 5-7 minutes, or until crisp, stirring half way through.

Remove from oven and cool completely; store in an air-tight container at room temperature; to serve, top overnight oats with the crumble.
