Creamy Lemon Fruit Dip

When most of us think of dips, we tend to think of the savoury versions, ones served with crisp veggie sticks or crunchy chips. Here we have turned the traditional dip on its head and made it a sweet treat! This creamy dip is reminiscent of lemon merengue pie, tangy, rich, and creamy, and is easy to make, chill and, serve.

- ¼ cup sugar
- ½ cup lemon juice
- ¼ cup orange juice
- 5 egg yolks
- pinch salt
- 1 Tbsp butter
- In a small saucepot combine the sugar, lemon juice, orange juice, egg yolks, and salt.
- Set over medium heat and whisk constantly until thickened, about 6-7 minutes.
- Remove from heat and whisk in butter until melted. Strain and chill, in the refrigerator, covered, for one hour.
- Serve with assorted fruit.
