These party snacks are hearty enough for all your guests to enjoy and can be made from easy-to-find and cost-effective ingredients.
Using roasted cauliflower in place of tortilla chips means that you can eat these nachos to your heart’s content. Drizzle cauliflower florets with a scant amount of olive oil and roast in a 400°F oven for 20-30 minutes or until the cauliflower is crispy and brown in spots. Load up the cauliflower with all your favourite nacho toppings and finish with a layer of Monterey Jack or mild cheddar cheese. Serve cauliflower nachos with salsa, plain nonfat yogurt, and guacamole.
Cucumber tuna boats
Hollowed-out cucumber filled with tuna (packed in water) will satisfy crunchy snack cravings while sticking with zero Points® food. Mix 2-3 tablespoons of nonfat plain yogurt with a can of drained water-packed tuna; season with salt and pepper, a teaspoon of Dijon mustard, and a generous tablespoon of minced capers. Using a small spoon, hollow out a halved cucumber lengthwise and fill with the tuna mixture. Top with fresh parsley and thinly sliced scallions to serve.
Deviled eggs are currently enjoying a resurgence in popularity, with many restaurants and bars offering their own version of this classic snack as part of their tasting menu. Deviled eggs are endlessly adaptable and can be made ahead of time so you won’t get caught peeling 24 hard-boiled eggs as your guests are arriving. Begin with a dozen hard-boiled eggs that have been peeled and cooled. Carefully halve each egg lengthwise and remove the yolk, being careful to not disturb the whites as you work. Mash up the egg yolks with a few tablespoons of nonfat plain yogurt, adding a small amount of mayonnaise for the most authentic flavour.
