Ingredients

Popcorn kernels (unpopped)

80 g

Kale

2 cup(s), (4 handfuls) chopped

Lemon zest

2 tsp

Oil spray

2 x 3 second spray(s)

Instructions

  1. To cook the popcorn, place popcorn kernels in an air popper and cook following manufacturer’s instructions. Alternatively, if you’re using the microwave, place popcorn in a microwave-safe bowl, cover with plate and microwave on High (100%) for 3–4 minutes or until popping subsides. Be sure to lightly spray cooked popcorn with oil before adding flavour to help it stick.
  2. Preheat oven to 160°C. Spread kale on a baking tray and lightly spray with oil. Bake for 8–10 minutes or until crisp. Process in a food processor with lemon zest. Sprinkle over popcorn and toss to combine. Serve.
