Side dishes don’t come more Irish, or delicious, than creamy colcannon mash — a sure-fire way to add a dollop of comfort to any meal.

Ingredients

Potato(es)

450 g, (500g desiree), peeled, chopped

Skim milk

¼ cup(s), (60ml), warmed

Olive oil

2 tsp

Savoy cabbage

350 g, 1/4 small, trimmed, finely shredded

Green shallot(s)

4 individual, trimmed, thinly sliced

Garlic

2 clove(s), crushed

Instructions

  1. Boil, steam or microwave potatoes. Drain. Place in a large bowl and mash until almost smooth. Stir in milk.
  2. Meanwhile, heat olive oil in a large non-stick frying pan over medium-high heat. Add cabbage and cook, stirring occasionally, for 3 minutes or until wilted. Add shallots and garlic and cook for 1 minute or until fragrant. Add cabbage mixture to mash. Stir until combined. Serve.
