Ingredients

Olive oil

1 tsp

Brown onion

1 medium, chopped

Garlic

3 clove(s), crushed

Carrot(s)

2 medium, diced

Zucchini

1 medium, diced

Celery

2 stick(s), diced

Fresh thyme

1 tbs, chopped

Extra lean beef mince, raw

300 g

Canned diced tomatoes

400 g, (1 x 400g can)

Dry lasagne sheet

80 g, broken into pieces

Fresh basil

Pizza blend cheese

Instructions

  1. Heat oil in a large deep ovenproof frying pan over high heat. Cook onion, garlic, carrot, zucchini, celery and thyme, stirring, for 10 minutes or until lightly browned. Add mince and cook, stirring to break up any lumps, for 2 minutes or until mince has browned.
  2. Stir in tomatoes and 1¼ cups (310 ml) water. Season with salt and pepper and bring to the boil. Push pasta pieces into beef mixture, making sure they are covered. Reduce heat and simmer, covered, stirring occasionally, for 10 minutes. Simmer, uncovered, for a further 5 minutes or until pasta is tender and sauce has thickened.
  3. Preheat grill on high. Sprinkle chopped basil and cheese over pasta mixture. Place pan under grill for 2–3 minutes or until cheese is melted and golden. Top with extra basil leaves.
