- 1/2 cup(s) pineapple, (half small pineapple) peeled, cored, chunks
- 2 medium mango, peeled, seed removed, sliced
- 2 medium banana, sliced
- 250 g fresh strawberries, hulled, halved
- 125 g fresh blueberries
- 2 medium fresh passionfruit, flesh removed
- 1/2 individual lime rind
- 2 tbs lime juice
- 60 ml Coconut water, no-added sugar, (¼ cup)
- 40 ml liqueur, Malibu (2tbs)
- 1/4 cup(s) fresh mint, sprigs, to serve
Place pineapple, mango, banana, strawberries and blueberries in a large serving bowl.
Combine passionfruit flesh, lime rind and juice with coconut water and liqueur in a small bowl. Pour over fruit and gently stir. Chill, covered, for 30 minutes to macerate.
Spoon into serving bowls and top with mint.
