Crispbread topping ideas
It's amazing how much you will look forward to your lunch or snack if it features something tasty. These topping ideas fit the bill perfectly!
Dukkah egg
Spread 2 wholegrain crispbreads with 1 tsp canola spread. Top with 1 sliced hard-boiled egg. Serve sprinkled with 1 tsp dukkah and 1/4 cup alfalfa sprouts.
Nut spread, banana and honey
Top 2 wholegrain crispbreads with 2 tsp nut spread, 1 small banana (thinly sliced) and 1 tsp honey.
Sardine pate
Process 1 x 85g can sardines in springwater (drained) and 1tbs of light cream cheese until smooth. Stir in 1tbs of fresh chives (chopped) and ¼ red onion (finely chopped). Top 2 wholegrain crispbreads with sliced cucumber and pate.
Ricotta, banana and strawberry
Spread 4 wholegrain crispbreads with 4 tbs low-fat ricotta. Slice a small banana and arrange on top with sliced fresh strawberries. Drizzle with honey and dust with cinnamon if desired.
Smoked salmon and avocado
Slice a quarter of an avocado and drizzle with fresh lemon juice. Spread onto 2 wholegrain crispbreads. Top each with a slice of smoked salmon and top with watercress. Season with salt and pepper.
Tuna, mayo and rocket
Drain and mash a 85g can of tuna in springwater (drained) with 2 tsp low-fat mayonnaise, 1 tbs finely chopped red onion and 2 tbs chopped cucumber. Season with salt, pepper and a squeeze of lemon juice. Serve on top of 2 wholegrain crispbreads, garnished with rocket leaves and chopped chives.
Turkey and cottage cheese
Spread 3 wholegrain crispbreads with light cottage cheese. Top with 3 slices 98% fat-free deli-style turkey and 2 tsp chopped chives.
Ham, cheese, tomato and basil
Spread 2 tbs light cottage cheese over 2 wholegrain crispbreads. Top with 2 slices 97% fat-free deli-sliced ham, fresh slices of tomato and sprinkle with chopped basil. Sprinkle with salt and pepper.
Cheesy tuna
Spread 3 tbs light cottage cheese over 2 x wholegrain crispbreads and top with 85g can tuna in springwater (drained). Sprinkle with 2 tsp dukkah and top with 1 Roma tomato (sliced) and a handful rocket. Season with salt and pepper.
