Spaghetti Bolognese Video

400g extra lean beef mince
◎ 1 brown onion, coarsely chopped
◎ 1 zucchini, coarsely grated
◎ 1 large carrot, coarsely chopped
◎ 1 red capsicum, coarsely chopped
◎ 200g button mushrooms, sliced
◎ 2 garlic cloves, finely chopped
◎ 2 x 400g cans chopped tomatoes
2 tbs tomato paste
◎ 1 tbs Italian dried herbs
1 vegetable stock cube

1. Lightly spray a large saucepan with oil and heat over medium heat. Cook beef mince, without stirring, for 2 minutes or until browned, then break up any lumps with a wooden spoon. Add onion, zucchini, carrot, capsicum, mushroom, garlic, tomatoes, tomato paste, dried herbs and stock cube dissolved in 150ml hot water. Stir well and bring to the boil. Reduce heat to low and cook, covered, for 30-40 minutes or until sauce thickens.
2. Meanwhile, cook spaghetti in a large saucepan of boiling salted water, following packet instructions, or until al dente. Drain. Divide between 4 plates and spoon over the sauce.
SERVING SUGGESTION: Fresh basil leaves.
