Thanksgiving Parfaits
Parfaits can be savory too! All of your favorite Thanksgiving flavors in one glass...

Ingredients:
1 1/2 cups instant mashed potato flakes
1/4 tsp. onion powder
1 tbsp. light whipped butter or light buttery spread
Dash each salt and black pepper, or more to taste
1/2 cup fat-free turkey gravy
8 oz. cooked and chopped skinless turkey breast
One 14.5-oz. can green beans, drained and chopped
2 tbsp. sweetened dried cranberries

Directions:
In a large microwave-safe bowl, thoroughly mix potato flakes, onion powder, and 2 1/3 cups of water. Cover and microwave for 4 minutes, or until hot.
Once cool enough to handle, stir in butter, salt, and pepper. Re-cover and keep warm.
Place gravy in a medium microwave-safe bowl. Microwave for 2 minutes, or until hot.
Evenly distribute half of the potatoes among 4 mid-sized glasses, about 1/3 cup each.
Evenly distribute the chopped turkey and green beans among the glasses, about 1/3 cup each per glass.
Evenly distribute remaining mashed potatoes, followed by gravy. Top with cranberries and enjoy!
MAKES 4 SERVINGS

Gobble, Gobble Cranberry Grilled Cheese
Tired of cooking? Me too! Luckily, this Thanksgiving-inspired grilled sandwich practically makes itself!

Ingredients:
2 slices light bread
1 wedge The Laughing Cow Light Creamy Swiss cheese
1 tsp. Dijon mustard
2 tbsp. jellied cranberry sauce
2 oz. cooked and sliced skinless turkey breast
1 slice fat-free American cheese
2 tsp. light whipped butter or light buttery spread

Directions:
Plate bread slices, and spread one slice with the cheese wedge. Spread the other bread slice with mustard, and top it with cranberry sauce, turkey, and American cheese. Place the other bread slice on top, cheese side down.
Spread the top of the sandwich with 1 tsp. butter.
Bring a skillet sprayed with nonstick spray to medium-high heat. Place sandwich in the skillet, buttered side down. Spread the top with remaining 1 tsp. butter.
Cook until lightly browned on the outside and cheese has melted, about 2 minutes per side.

Serve and enjoy!
