You’re searching the fridge, the pantry, staring at your kids’ leftover pizza crust, debating what to eat but you know you're pretty much maxed out for the day.
Don’t sweat it, you’re in luck. Here are five tasty recipes that will fit the bill.
Italian Vegetable Soup
Make the most of the season’s fantastic fresh vegetables. If you have any leftovers, freeze them in individual, reheatable portions.
Vegetable Kabobs
Pepper and mushroom kabobs with a yogurt-dill dip. So tasty to eat, so nice to look at.
Cauliflower Poppers
Roasting cauliflower florets brings out their natural sweetness. Cumin and chili powder give a touch of spice and heat.
Roasted Eggplant and Tomato
A cross between a dip, a warm salsa and a bruschetta topping. Eat it with a fork or scoop it up with celery sticks.
Spinach-Parmesan Dip
Just toss everything in your food processor or blender and off you go. Serve on thickly cut carrot or cucumber slices instead of chips.
