Egg White Omelet with Chives and Parmesan
Coat a small frying pan with cooking spray and heat over medium heat. In a small bowl, beat 3 egg whites until frothy and pour into prepared pan. When edges start to firm up, top eggs with 1 tablespoon of chopped fresh chives and 1 teaspoon of grated Parmesan cheese.
