Salmon Brown Rice Sliders w/ Wasabi Avocado Mango Aioli

Ingredient List

Salmon Patty:
  • 8oz Salmon, diced
  • 1 Egg white
  • ½ cup Brown Rice, cooked
  • 2 Tbsp Green Onion, sliced
  • 1 Tbsp Cilantro, chopped
  • ½ Tbsp Nakano Mango Rice Vinegar
  • 1tsp Garlic, minced
  • 1tsp Salt
  • ¼ tsp White pepper, ground
  • 1 Tbsp Oil
Aioli:
  • 1 Avocado, diced
  • 1/8cup Fat-free Mayonnaise
  • 3 Tbsp Nakano Mango Rice Vinegar
  • 1 Tbsp Cilantro, chopped
  • ½ Tbsp Wasabi Paste
  • 1 tsp Garlic, minced
  • ½ tsp Salt

Instructions

  1. For the salmon patties, combine all ingredients together. Form mixture into 8 patties, about 1.5-2 oz. each. Preheat griddle or non-stick sauté pan. Add oil as needed. Cook each side about 3-4 minutes.
  2. For the aioli, combine all ingredients in the bowl of a food processor. Pulse until smooth. Reserve.
  3. Spread 1 tablespoon of the aioli on each of the patties. Serve immediately.
Serving: 1 slider with 1 Tbsp aioli, 3 PPV
