Grilled Jamaican Chicken with Charred Pineapple Relish

Ingredients

  • 2 ½ cups pineapple, skinned and cored
  • cooking spray
  • ¼ cup scallions, chopped
  • ¼ cup red pepper, finely diced
  • 2 Tbsp fresh lime juice
  • 1 tsp jalapeno pepper, finely diced - to taste
  • 1 Tbsp honey
  • 1/8 tsp salt
  • ½ tsp black pepper
  • 5 PERDUE® PERFECT PORTIONS® Boneless, Skinless Chicken Breasts, Jamaican Style Jerk (approx. 4.8 oz each)
  • 2 cups Microwave Ready Jasmine Rice

Instructions

  1. Preheat grill.
  2. Cut pineapple into large half rings, about an inch thick. Spray pineapple with cooking spray and place onto grill. Cook each side for 2-3 minutes until the pineapple has dark grill marks on both sides.
  3. Rough chop the pineapple and place into a mixing bowl. Add the scallions, red pepper, lime juice, jalapeno, honey, salt and pepper. Blend well and let marinate for two hours. When ready to cook chicken, off heat, coat grill with cooking spray and then preheat grill to medium-high heat.
  4. Grill seasoned chicken breasts until internal temperature has reached 170°F, about 3 to 4 minutes per side
  5. Meanwhile, microwave Jasmine Rice for 15 minutes or until ready. Serve chicken breasts over top rice and top with charred pineapple relish.
Serving Size: 1 chicken filet, 2/3 cup rice and 1/4 cup relish
