Chicken Pesto Lettuce Pockets

Ingredients

  • 3 pieces Frozen? Or refrigerated? PERDUE® SIMPLY SMART® Breaded Chicken Breast Tenders, Gluten Free (about 3oz each)
  • 1/2 medium diced plum tomato
  • 2 Tbsp minced scallions
  • 1 tsp prepared basil pesto sauce
  • 3 large butter lettuce leaves
  • 2 Tbsp grated Parmesan cheese
  • ½ Tbsp toasted pine nuts

Instructions

  1. Preheat oven to 425 F. Bake chicken tenders until heated through, about 9-11 minutes
  2. Meanwhile, in a small bowl, combine tomatoes, scallions and pesto. Toss to coat.
  3. Place 1 lettuce leaf on each of 3 plates. Top each leaf with a baked chicken tender.
  4. Spoon tomato mixture evenly over chicken tenders in each packet. To serve, sprinkle with Parmesan cheese and pine nuts.
Serving Size: 1 Lettuce pocket (3oz chicken and 1 ½ Tbsp of tomato/pesto mix)
