Look for
Naturally brewed soy sauce. The brewing process should take a few months – products that are “brewed” in a day or two are of inferior quality.
Avoid
- Products with caramel in the ingredient line. This is an added color enhancer.
- Large bottles. Smaller quantities make it easier to control freshness.
Keep in mind
Store soy sauce in a cool dark place. Crystallization at the bottom of the bottle means that the soy sauce is old and should be discarded.
