Instructions

  1. In a medium-size saucepan, combine water, rice, raisins, sugar, salt, and cinnamon; set over high heat. Bring mixture to a boil and then reduce heat to low; simmer, covered, until water is absorbed and rice is done, about 15 to 18 minutes. Stir in lemon zest; fluff with a fork and serve. Yields about 3/4 cup per serving.
