A bit special and very delicious, this finger-food snack is easy to prepare. Whole-grain bread is spread with cream cheese and piled with smoked salmon, dill, capers, red onion, and a touch of grated lemon zest. It’s easily big-batched for sharing with friends. Top the cream cheese with thinly sliced English (seedless) cucumber for some fresh flavor.

Ingredients

Whole wheat bread

1 slice(s), or whole-grain

Low fat cream cheese

1 Tbsp, (Neufchatel)

Smoked salmon, lox

1 oz, thinly sliced

Dill

1 tsp, chopped fresh

Capers

1 tsp

Red onion

1 tsp, minced, finely chopped

Lemon zest

1 tsp, grated

Instructions

  1. Lightly toast bread; remove crust.
  2. Spread warm bread with cream cheese and top with salmon. Cut into 4 triangles; sprinkle with dill, capers, onion, and lemon zest.
  3. Serving size: 4 salmon-topped triangles
