A simple combination of water and fresh fruit, this cold drink is light and refreshing, perfect for hot summer days. Plus, it’s ready in just 5 minutes. To make quick work of peeling the kiwi, just cut the fruit in half crosswise and use a metal spoon to scoop the flesh out and into the blender. It’s easier and a lot less messy. You could also substitute other fruit. Try strawberries, raspberries, blueberries, or peaches. Add sugar or artificial sweeteners, if you would like a sweeter drink. You can puree the fruit ahead and store it in the fridge, but pour the sparkling water in just before serving so it keeps its bubbles.

Kiwifruit

2 medium, peeled and coarsely chopped

Water

½ cup(s), still-mineral (4 fl oz)

Unsweetened orange juice

½ cup(s), (4 fl oz)

Water

4 cup(s), sparkling-mineral (32 fl oz)

Instructions

  1. Puree kiwi, still water, and orange juice in a blender or food processor until smooth, about 2 minutes.
  2. Add the puree to a large pitcher filled with ice, and pour in sparkling water; stir lightly and serve. Yields about 1 1/4 cups per serving.
