Oatmeal isn't the only grain that makes a great bowl of porridge. Cooked quinoa, made creamy and rich with the additions of almond milk and powdered peanut butter, is a filling, protein-rich option. The red grapes on top give this breakfast a peanut butter-and-jelly vibe that's a hit with kids and adults alike, but don't stop at just grapes. Banana slices or any of your favorite fruits would be delicious on top. Any plant-based or dairy milk can be substituted for the almond milk.

Ingredients

Cooked quinoa

¾ cup(s)

Plain unsweetened almond milk

½ cup(s)

Unpacked brown sugar

1 tsp

Powdered peanut butter

2 Tbsp

Red seedless grapes

½ cup(s), halved

Instructions

  1. In a medium saucepan, combine quinoa, milk, and brown sugar. Bring mixture to a simmer over medium-high heat; cook 2 minutes. Remove from heat and stir in powdered peanut butter. Top with grapes.
  2. Serving size: 1 cup porridge and 1⁄2 cup grapes
