Cooking chicken breasts couldn’t be easier than this. Lemon pepper seasoning has all the flavor you need, and mayonnaise not only adds flavor and moisture, it also works to keep the seasoning stuck onto the chicken. If you can’t find cutlets at the store, it’s really easy to just cut the chicken breasts in half. Lay the chicken on a cutting board and place your hand flat on top. Cut the chicken in half with a sharp knife. Don’t worry if it’s not perfect!

Ingredients

Light mayonnaise

¼ cup(s)

Lemon pepper

1 Tbsp

Kosher salt

¼ tsp

Uncooked boneless skinless chicken breast

1 pound(s), 4 (4-oz) cutlets, or 2 (8-oz) breasts cut horizontally into cutlets

Instructions

  1. Heat a grill or grill pan to medium-high. In a small bowl, whisk the mayonnaise, lemon-pepper seasoning, and salt. Arrange the chicken on a baking sheet and brush both sides of the cutlets with the mayonnaise. Grill the chicken, turning once, until cooked through, 3 to 5 minutes per side.
  2. Serving size: 1 cutlet
