Banana slices are sandwiched with creamy almond butter, then dipped in melted chocolate for this sweet treat. We cut off the ends to get uniform slices for sandwiching, but don’t toss those trimmings. Freeze them for smoothies later.

Banana

Almond butter

4 tsp, divided

Dark chocolate chips

Instructions

  1. Cut off the thinner ends from the bananas. Cut each banana into eight ½-inch-thick slices to yield a total of 16 slices. Spread ½ tsp almond butter each onto 8 slices and top with the remaining slices. Line a plate with foil or parchment paper and transfer the banana sandwiches to the plate. Freeze for 30 minutes or until firm.
  2. In a small microwave-safe bowl, microwave the chocolate chips on High for 30 seconds and stir. Continue to microwave the chocolate in 10-second intervals until melted.
  3. Dip half of each frozen banana sandwich in the melted chocolate. Return the sandwiches to the freezer until the chocolate sets, about 2 minutes. Store the sandwiches in an airtight container in the freezer for up to 1 month.
