This is one stylish slice of toast! A simple, ready-in-minutes sunny side up egg gets layered with ingredients that are favorites in Italy - prosciutto, tomatoes arugula, and balsamic vinegar. Arugula has a peppery bite. If it's too strong for your taste, swap in baby spinach leaves, they'll make a fine substitute. With this quick, one-skillet breakfast, you can have a substantial morning meal on the table in under 10 minutes. Add a side of sliced fruit or some hash brown potatoes and you've got brunch.
